Seafood Chowders

Ingredients
- 4 T butter or bacon fat
- 1 C leeks or onions
- 1 cl garlic, minced
- 4 T flour, rounded
- 4 C chicken or seafood stock
- 2 t fresh thyme, chopped
- 1/4 t nutmeg
- 1 C heavy cream
Options
- shrimp
- crabmeat
- scallops
- corn
- country ham
- celery
- potato, fine chop
- spinach
- blue cheese
- poblano chili
Instructions
- Sauté the leeks and garlic in the butter or bacon fat, then add the flour to make a roux.
- Add the stock mixture to the roux, then add the spices, cream and options and cook until done.
- Plate and serve.
